Easy Vegan Jackfruit Tacos (Pulled Pork) Recipe

Easy Vegan Jackfruit Tacos (Pulled Pork) recipe
Dash of Honey

These easy jackfruit tacos are so flavourful! They mimic the texture of pulled pork and they are a good plant-based alternative. Dinner's ready in less than 30 minutes, perfect for your Taco Tuesday.

Ingredients

2 cans of jackfruit meat (400ml can of young green jackfruit in brine or in water)*
1 yellow onion, diced
1 tbsp of olive oil
3 cloves of garlic, minced
2 tbsp of tomato paste
3 tsp of paprika
3 tsp of mexican chili powder
1 tsp of cumin powder
½ tsp of onion powder
1 tsp of dry oregano
1 cup of beer (wheat or lager - I use Corona)
Spicy sauce to taste
Tortillas tacos
Toppings of choice

Method

1
Prepare the toppings and cook the tortillas.
2
Open the canned jackfruit and transfer into a paper towel or tea towel. Press firmly with your hands and try to soak up as much water as possible.
3
Shred the jackfruit meat. You can do so with a food processor and pulse a few times. Be careful, we don’t want to shred it too much, we still want a similar meat texture. You can also cut it finely on a chopping board. This is the technique I use the most.
4
Cook the jackfruit. Place a large pan over medium heat and sauté the onion with olive oil for about 5 minutes, until tender. Add garlic and cook for another minute.
5
Add shredded jackfruit, tomato paste, spices and beer. Mix u0026 season well. Cook for about 5 minutes, making sure that the beer is evaporated. Add spicy sauce if desired.
6
Serve on some tortillas and add your favorite toppings. This recipe yields 12 tacos (3 per person - 4 portions).
