Caramelized Onion Soup with Gruyère Toast recipe

This is a warm, yummy soup with sweet onions and melted cheese on bread. You cook onions until they're like candy, then make soup. Put cheese on bread and broil it to make it toasty and melty. It's good for cold days!

Ingredients

6 medium yellow onions
1 tablespoon minced garlic
40 g unsalted butter
1.2 L vegetable stock
1 bay leaf
1 teaspoon dried thyme
1/2 teaspoon sugar
1 tablespoon balsamic vinegar
4 slices of crusty bread
120 g Gruyère cheese, shredded
Salt and pepper to taste
2 tablespoons extra virgin olive oil

Method

Peel and thinly slice the onions. In a large pot, heat the olive oil over medium heat and add the onions with a pinch of salt and sugar. Cook, stirring occasionally, for about 30 minutes until the onions are caramelized.

Add the minced garlic and butter to the onions, and cook for another 5 minutes until the garlic is fragrant.

Pour in the vegetable stock, add the bay leaf and dried thyme, and bring to a simmer. Cook for 15 minutes.

Preheat the broiler. Drizzle balsamic vinegar into the soup and stir. Adjust the seasoning with salt and pepper.

Place the slices of bread on a baking sheet, top with shredded Gruyère cheese, and broil until the cheese is bubbly and golden brown, about 3-5 minutes.

To serve, ladle the soup into bowls and top each with a slice of the Gruyère toast. Enjoy your cozy meal!
