These tender muffins are a grab-and-go breakfast treat. 

Ingredients

1 1/2 c. all-purpose flour, spooned and leveled
2 tsp. baking powder
1/2 tsp. kosher salt
1/2 tsp. freshly ground black pepper, plus more for sprinkling
2 large eggs
1 c. whole buttermilk
4 tbsp. (1/2 stick) unsalted butter, melted
4 oz. sharp Cheddar cheese, grated (about 1 cup)
2 oz. Parmesan cheese, grated (about 1/2 cup), plus more for top
4 slices bacon, cooked and crumbled
3 tbsp. chopped fresh chives

Method

Preheat air fryer to 350ºF. Mix together flour, baking powder, salt, and pepper in a bowl. Whisk together eggs, buttermilk, and butter in a separate bowl. Add wet ingredients to dry and whisk to combine. Fold in cheeses, bacon, and chives. Fill lightly sprayed paper cupcake liners or silicone muffins cups, roughly half to 2/3 full. Sprinkle tops with a little extra pepper and Parmesan cheese.
